Cookies That Burn Fat

The best thing is that they are sweet, chocolatey, and moist, everything you’d expect from a chocolate chip cookie, except they are 100% gluten and grain-free, and full of anti-oxidants and protein.

Pumpkin Chocolate Chip Cookies

Dairy Free, Grain Free, Sugar Freecookies that burn fat
Serves: 24 cookies

Prep Time: 10 minutes
Cook Time: 10 minutes

The taste of fall shines in this recipe. Take pumpkin, pair it with dark chocolate, and you have one irresistible cookie.

2 cups almond flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ cup Lily’s Dark Chocolate Chips
¼ cup xylitol
1/3 cup coconut oil, slightly melted
1 Tablespoon pure van
illa extract
1 pastured egg
1/3 cup pumpkin puree

Preheat oven to 350º F.

In a mixer, combine all ingredients except the chocolate chips. Mix on low speed until well combined. Stir in the chocolate chips with a spatula.

Spoon onto cookie sheets lined with unbleached parchment paper. Drop them in about 1 tablespoon measures about 2 inches apart (a mini ice cream scoop works great). Then, slightly flattened the cookies with the back side of a spoon.

Bake 8-9 minutes. After removing them from the oven, gently transferred the cookies to the cooling rack by sliding the parchment paper right off the cookie sheet onto the cooling rack.
